
The story
Roly Poly is the first place in Da Nang that makes only gỏi cuốn, the fresh Vietnamese spring roll. Not a restaurant that also sells spring rolls. A restaurant that sells nothing else.
Every roll is made by hand after you order. Nothing is rolled early and nothing waits in a fridge. That is why the rice paper is still soft and the herbs are still fresh when the plate reaches you.
They keep the menu short on purpose. Ten fillings and five sauces, and that is the whole list. A small menu is how a kitchen keeps every plate the same, and how they can cut and prepare food all day instead of once in the morning.
The sauces are made here, every day. Peanut, toasted sesame, nước chấm, sweet and sour, spicy mayo. In their own words, no bottles and no shortcuts. The vegetables, the herbs and the seafood come from Da Nang markets, farmers and fishermen.
Three of the ten are vegan, and most have no gluten. All of it is written on the menu, so you do not have to ask. That is hard to find in this city.
It is also a coffee shop. Vietnamese coffee, salted coffee, coconut coffee, fresh juice and matcha, on An Thượng 6, a few minutes from My Khe beach.
The menu

Prawn, smoked goose, lemongrass beef, roasted crispy pork belly, satay chicken, poached chicken and avocado, tofu three ways, and avocado on its own. From 35,000.

Nothing is rolled before you ask for it, and nothing goes in the fridge. They prepare food all day, not just in the morning.
